Cooking Instructions
7 steps
Wash okra thoroughly and dry completely using a kitchen towel. Cut off the ends and slice into 1-inch pieces.
Heat 3 tablespoons oil in a pan. Add okra and sauté on medium-high heat for 10-12 minutes until crispy and lightly browned. Remove and set aside.
In the same pan, add remaining oil. Add cumin seeds and let them splutter. Add chopped onions and sauté until golden.
Add ginger-garlic paste and green chilies. Sauté for a minute. Add chopped tomatoes and cook until soft.
Add turmeric, red chili powder, coriander powder, and salt. Mix well and cook for 2-3 minutes.
Add the fried okra to the masala. Mix gently. Add amchur powder and garam masala. Cook for 2-3 minutes.
Garnish with fresh cilantro. Serve hot with roti or dal-rice.
