If using dried chickpeas, soak overnight and pressure cook until tender. If using canned, drain and rinse.
Heat oil in a pan, add cumin seeds and let them splutter.
Add chopped onions and sauté until golden brown.
Add ginger-garlic paste and green chilies, cook for 2 minutes.
Add chopped tomatoes and cook until they become soft and mushy.
Add all the spice powders (coriander, cumin, red chili, turmeric) and cook for 2 minutes.
Add cooked chickpeas and mix well. Add water if needed for desired consistency.
Simmer for 15 minutes, allowing flavors to blend.
Add garam masala and amchur powder, mix well.
Garnish with fresh coriander and serve hot with bhature or rice.
