Cooking Instructions

Marinate mutton with yogurt, ginger paste, garlic paste, and salt for 2 hours
Heat ghee in a pressure cooker, add bay leaves, cardamom, cinnamon, and cloves
Add sliced onions and fry until deep golden brown
Add marinated mutton and cook on high heat for 10 minutes
Add Kashmiri red chili powder, fennel powder, and ginger powder. Mix well
Add tomato puree and cook for 5 minutes
Add water and pressure cook for 5-6 whistles until mutton is tender
Open the cooker and simmer the gravy until it reaches desired consistency
Check seasoning and adjust salt if needed
Garnish with fresh coriander and serve hot with naan or rice
