Cooking Instructions
7 steps
Wash tinda thoroughly. Peel and cut into quarters or halves depending on size.
Heat oil in a pan. Add cumin seeds and let them splutter. Add chopped onions and sauté until golden brown.
Add ginger-garlic paste and green chilies. Sauté for 2 minutes. Add chopped tomatoes and cook until soft and mushy.
Add turmeric, red chili powder, coriander powder, and salt. Mix well and cook for 3-4 minutes until oil separates.
Add tinda pieces and mix well to coat with masala. Add 1/2 cup water, cover and cook for 15-20 minutes until tinda is tender.
Add garam masala and kasuri methi. Mix well and cook for 2-3 minutes.
Garnish with fresh cilantro. Serve hot with roti or rice.
